env updates

Description

- Merge SITE\_URL into NEXT\_PUBLIC\_SITE\_URL and all others that are similar keeping in mind we use EXPO_PUBLIC on EAS, but not dev so need or statements in expo when it initializes
- update vercel key names to match .env.example
